Our Cabernet Franc wines are always in high demand, and the 2021 version will be no different. A beautiful, light tannin wine out of the bottle now, but let it open for a bit, or give it a good decant and it will soften nicely if you enjoy a smoother, velvety wine. The tannin and acid levels of this wine, however, will reward you later if you have the patience to store this in your cellar, as its sleek, elegant texture will age fantastically.
Opening now, you get some amazing spice (a cross between black pepper, white pepper and shiso spice), with the white pepper becoming more dominant as it opens. The fruit is moderate at the moment, but hints of wild cherry and raspberry are there, and will only become more prevalent as the wine opens. Dark chocolate and cedar round out the finish. Enjoy this wine with or without food, or, if you're game, pair it with a nice piece of chocolate - or any chocolate dessert.
