Our new Super Saxy is a blend of Cabernet Sauvignon (75%) from Bacchus vineyards in the White Bluffs AVA, and Syrah (25%) from Columbia Valley. A gorgeous medium spice wine with big raspberry fruit up front along with hints of lingering cedar. As the wine opens, get ready for some dark chocolate and tobacco. Tannins are mild now, so you can enjoy this wine immediately; but it will certainly age awhile if you want it to become a little softer over time.
Although you can pair this wine with any red meat dish, don't forget the less formal meals, such as serving it with your favorite pizza or pasta dish; and of course it will be the perfect match with any chocolate dessert. This wine is ready now…. so enjoy.
I love this wine, and my hope is you will as well. The Cabernet fruit for this wine all comes from Red Mountain, a tiny little area in the state of Washington, producing some of the best wines in the world. The fruit from this location can sometimes be hard to tame, but I think with the gentle handling of extraction, oak and extra time in bottle, I have achieved what I wanted to do. And that was to make a heck of a great Cabernet.
