Here's a beautiful soft tannin Cabernet Sauvignon with traces of Petit Verdot and Malbec that has been barrel aged nearly 3 years in neutral oak . The initial reaction is one of gorgeous spice on the sides of your tongue with hints of licorice. Then, almost immediately, a refreshing meld of raspberry and cherry fruit take over as if lightly splashed onto a cedar plank. As the wine opens, a little more earthiness is revealed as well as hints of cocoa and smoke.
Although this wine can be paired with any red meat dish, don't forget the less formal meals, such as serving it with your favorite pizza or pasta dish; and of course it will be the perfect match with any chocolate dessert. This wine is ready now…. so enjoy.
I love this wine, and my hope is you will as well. The Cabernet fruit for this wine all comes from Red Mountain, a tiny little area in the state of Washington, producing some of the best wines in the world. The fruit from this location can sometimes be hard to tame, but I think with the gentle handling of extraction, oak and extra time in bottle, I have achieved what I wanted to do. And that was to make a heck of a great Cabernet.
